After my first meal at Robot, I couldn’t forget about the restaurant because of the dining experience I had. So when I found out about their new degustation, I was the happiest person that moment!
This is yet another five-course degustation you wouldn’t want to miss, created by chef Bruce of Robot. And as you go through my dining experience at Robot, you will see the creativity, passion and love they’ve put on each composed plate.
We started with the Amuse Bouche.
Salmon Gravlax. Spring Roll Paper. Crispy Tanoki. Ginger Carrot Dressing

It was reminiscent of the Vietnamese Spring Rolls but instead was filled with salmon gravlax. The crispy tempura flakes went very well with the citrus vinaigrette used and the ginger carrot dressing brought it to a different level. It was so light and refreshing, and it readied our palates for the night.
First Course
Ahi Salad. Seared Tuna Tataki. Mixed Greens. Scallion Sauce

The scallion sauce complemented the seared tuna slices and everyone loved the Ahi salad. The fresh greens were prettily presented and a piece of the flavorful kanpyo tied it all together. (Kanpyo is a pickled Japanese gourd used in making Futomaki)
Second Course
Uni Linguini. Shellfish Emulsion. Uni Tempura. Asparagus. Mushrooms

This dish was my favorite of the night. The linguini was tossed in a shellfish emulsion which tasted like aligue (Crabfat), rich, creamy and tasted like the sea. The Uni Tempura was the best part!
Third Course
Steamed & Flash Fried Lapu-Lapu. Sesame infused Garlic Oil. Garlic Chives. Mushroom Broth

I liked how the sesame infused garlic oil removed the fishy taste of the Lapu-Lapu. The mushroom broth gave depth to the dish. This was again served with sautéed mushrooms which all of us loved.
Intermezzo
Tomato Yuzu Granita

Palate cleansing time, after all the rich and oily plates we’ve devoured. The granita had the right tartness and sweetness to it, like they’re fighting in my mouth. By this time, all I could think of was “bring on the next dish”.
Fourth Course
Prosciutto Wrapped US Beef Tenderloin. Season Vegetables. Steak Sauce. Truffled Mashed Potatoes. Mushrooms. Potato Hay with Wasabi Sprinkle

As usual, their steak sauce was the best, I mentioned this in my previous Robot post here. Beef was tender and the truffled mashed potato was a hit on our table. I like how all the dishes were well thought of, very constructive. In this last dish, I really appreciated the height through the use of the potato hay with wasabi sprinkle -- it was pretty and at the same time yummy.
Dessert
Apple Fritters ala Mode with Caramel

Our meal was capped off with this rich yet light dessert. The fritters were crisp and apples weren’t overcooked even if they were cut into small pieces. No one can go wrong with fritters served with ice cream and caramel drizzle!
After dinner chitchats came with cocktails. We ordered Jessica Rabbit (Php330) and Chocolate Almond Delight (Php330). Jessica Rabbit was a first and it tasted okay, more of coke-ish. The latter is a favorite, together with their Lady Gaga drink.


Robot is the place to go to if you want to have a delightful dinner that’s a feast both to they eyes and the stomach and followed by creative and irresistible cocktails.
